Aku Nak Bersara

Duduk bogel di depan komputer, aku menulis macam dewa. Takpun macam hamba.

Pakcik Najib! Bak le barang USD400 juta ke, GBP1 Trillion ke. Bosanlah jadi orang tak kaya ni.

Selagi tak kaya, kita akan diperkotak-katikkan.

Aku nak jadi kaya, bukan pasal nak kacau orang, atau nak berlagak dengan bawak kereta Toyota Camry ke hulu ke hilir. Atau nak tidur pakai spek. Aku cuma nak duduk seorangan tanpa sesiapa kacau aku.

Aku nak bersara. Aku nak menarik diri dari dunia kepahlawanan.

Aku cuma nak duduk seorang, pastu tulis skrip. Satu skrip, setahun ke. Lapan bulan ke.

Pastu jadi superhero.

Orang miskin, kadang-kadang bukan bodoh. Takdak management je. Pastu budaya 'akulah mangsa'. Siapa lagi sakit, dialah raja.

Pukimaklah itu semua. Aku dah malas dengan drama.

Kalau aku capai target aku, aku boleh bersara dan pergi balik Kuantan, tolong sesetengah orang kampung.

Aku rasa, daripada 100 orang, 99 akan jahanam dan memang tak boleh ditolong. Tapi kalau ada satu dari 100 pun dah cukup dah.

Orang KL ni kaya. Rumah RM25 juta. Sekali makan, beberapa ratus. Mewah sungguh. Orang kampung aku, nak makan, mintak nasi sejuk jiran sebelah je.

Takpun, tangkap katak, jual.

Ko bagi diorang ni duit, pinjam ke apa ke, dia jahanamkan jugak. Lari, taknak bayar. Habiskan kat dadah, beli kereta, beranak macam orang gila.

Kerajaan datang, cuba nak tolong. Habis jahanam. Takde sapa nak manage.

Ko bagi aku lima juta ke, aku akan pergi dan manage. Aku yakin, aku boleh raise lebih lima juta dalam masa tiga tahun. Untuk projek-projek superhero. Yang akan berjaya, pasal aku sendiri yang jayakannya. Bukan pass kat orang lain.

Jadi, bagilah aku lima juta. Untuk diri aku sendiri. Supaya aku bebas dari kekangan kewangan dan boleh aku bersara dan menjadi superhero.

God of Cookery

Malay women treat their recipes as their most valuable secrets. They get approval, recognition and sometimes money from these things.

As an eternal student, I have had the pleasure of observing how my mother cooks.

She is an expert in all the basic cooking styles. There's hardly any Malaysian dish she can't cook.

Her style is different than my father's who cooks with a scientific, measured approach. She cooks as she pleases and her mood influences the ingredients and the subsequent taste of the dish.

I have learned a lot, but am too lazy to cook for myself.

I can do a decent curry, or masak merah, because it's all about throwing things together and turning up the heat.

My version of the curry has an imperfection, though. SInce I couldn't be bothered to stir it all the time, tiny little soft granules would appear. And I use fresh milk instead of freshly-pressed coconut milk.

There are other tips and tricks I have learned.

My mother is a master at baking cookies. Not the bland chocolate chips, but a whole range of stuff. And there are lots of tricks for these things.

For example, in making Biskut Jakarta - basically small coconut tarts - the dough has to taste different and you can't use butter. Normal people use margarine, which makes it taste cheap and oily. There is another secret ingredient that can make it have a salty tang without being too oily.

Biskut Arab or Biskut Makmur uses ghee. The right amount of ghee will create the distinct flavour. Too little or too much, and it sucks.

My mother's most complicated recipe is Puding Raja. It has two components - a kind of fruit pudding and a type of roti jala called Jala Emas using only the yolk of duck eggs, and other things.

There are ways to make a bread rise, without using too much yeast that could leave the bread dry and bitter.

Tempeh has to be stirred constantly, or it won't cook properly.

Cutting Biskut Dam is least effective using a knife. There is a way to cut it to leave these little texture marks that ensure it's crispier than normal.

I love Malaysian dishes, and have had the chance to observe Southern style cooking, and Eastern-style. Though truth be told, I would often change Eastern-style because it's too fucking sweet. I do not like Kelantanese cooking because they use too much sugar and oil.

When cooking chicken rice, my family would turn to the Chinese side of the family. I also know how to make emperor chicken, though one of these days, I'd love to try making General Tso's Chicken.

My family, though, usually cooks the chicken twice. Once by steaming it, and the second time by lightly pan-frying it. This ensures a very tasty outer layer and soft, moist inner flesh.

While baking a whole chicken, you can use two temperatures for two different heating sessions. That's the secret of having crisp skin and soft flesh.

While making lemang, the type of bamboo plays a part and you use daun lerek instead of banana leaves. Banana leaves have a slight influence on the taste, which is a no-no.

To ensure really good lemang, you have to boil the glutinous rice in the bamboos for six hours first before putting it to the fire. This ensures the right thickness of crust and a singed flavour while making most of the lemang soft and chewy.

My mother has also mastered traditional kuihs like Kuih Bakar and Kuih Akak. Cara berlauk, temosa raja, karipap pusing, tepung bunga and kuih koci.

I love any kuih that uses glutinous rice flour. Like tepung bunga and kuih koci. When used properly, the flour is the basis for the soft, mochi texture.

Any idiot can do kuih koci (the counterpart to the Japanese mochi), but the most important part is the glazing. Without it, the kuih sticks annoyingly to the banana leaves.

The nasi lemak I often find in KL is not up to par. Real nasi lemak, you have to cook it with coconut milk AND pandan leaves. In KL, in order to save costs, they simply put pandan leaves in. That's it.

If I have the time and space, I think I'm going to start baking bread, as that is one thing my mother has failed to do.

The best bread I have ever had in my life was made by this old Chinese dude in Sungai Lembing. He used an old English brick oven. As dinner breads are an English specialty, brick or earth ovens are the best in making really good white bread.

The best white bread is soft and fluffy - due to an excellent leavening process and top-quality yeast - but does not contain too much of the microbes so as to ruin the taste.

Unfortunately, the old dude is dead. And his bread is lost forever.

Later in life, if I do become a millionaire, I am going to construct an earth oven, so I can bake bread. I will try out petalite and feldspar or whatever, to see which kind provides the best heat for making the best bread.

Am also thinking of buying a steamer so I can make steamed bread. And steamed chicken. And vegetables. And potatoes.

Almanak Masakan Bumi dan Langit: Sambal Syaitan

Dalam seni masakan Melayu, hidangan paling asas ialah sambal.

Ada bermacam jenis sambal, sebenarnya, tapi kita akan lihat dua jenis sahaja - Sambal Belacan dan Sambal Tumis.

Sambal belacan nampak senang - ambil lada/cili, belacan dan satu jenis bahan sebagai 'asam' dan tumbuk.

Semuanya bermula dengan pemilihan bahan. Kat kampung aku, keluarga aku pakai cili Afrika Selatan, lada jarum atau cili burung. Kitorang tanam sendiri, pasal payah nak dapat. Cili yang kecik dan berwarna coklat adalah cili yang paling pedas.

Kalau ikut kajian, cili paling pedas di dunia ialah Naga Jolokia yang mempunyai kadar Scoville (unit pengukuran kepedasan) melebihi satu juta. Aku tak kenal pun cili ni. Dan aku ada cara untuk memastikan cili yang biasa pun menjadi pedas.

Belacan terbaik datang dari Melaka, tapi jenis belacan tempat lain pun bagus jugak. Belacan fungsinya memberikan rasa masin dan rasa udang kepada sambal belacan.

'Asam' ada pelbagai jenis. Secara asasnya, ramuan ketiga yang akan memberikan tambahan rasa untuk sambal belacan. Mak aku suka pakai asam pauh atau mangga. Aku suka pakai tomato. Jenis yang lain adalah: asam gelugor, tempoyak, limau nipis dan asam keping.

Setiap satu jenis akan memberikan rasa yang berlainan kepada sambal belacan.

Alat terbaik untuk membuat sambal belacan ialah batu lesung atau lesung batu. Bukan blender. Kenapa? Kerana batu lesung/lesung batu berupaya memecahkan biji-biji lada. Inilah rahsia sambal kepedasan sambal belacan maksimum. Biji lada harus dilenyek untuk menaikkan kadar kepedasannya sehingga melebihi 1 juta Scoville. Sekadar kulitnya saja, tak cukup pedas.

Timing juga penting. Hanya masukkan asam pada peringkat terakhir tumbukan sambal. Setelah berpuas hati dengan kepedasan sambal, barulah masukkan tomato atau mangga. Kalau tidak, tekstur sambal belacan tidak bagus.

Sambal belacan terhebat ialah jenis yang akan mengakibatkan gastrik, dan setelah makan, harus merendamkan tangan dalam air batu, kerana panas sangat.

Sambal Tumis agak lain dari Sambal Belacan.

Pertama sekali, sambal tumis terbaik memerlukan cili kering yang dikisar, bukannnya serbuk cili, ya. Menggunakan serbuk cili untuk membuat sambal tumis ialah kesalahan jenayah yang wajar diISAkan.

Belacan juga memainkan peranan, juga bahan-bahan lain seperti (sedikit sahaja) bawang putih, merah dan kawalan penggunaan bawang besar.

Bawang besar dalam sambal tumis akan memberikan kemanisan, jadi kawalan ke atas bawang besar amat penting ketika membuat sambal tumis. Kalau ikut resepi aku, aku tak pakai langsung, pasal aku tak suka sambal tumis yang manis.

Seperti yang kita tahu, bawang besar mempunyai kemanisan sendiri yang jika dikenakan haba, akan menjadikannya 'caramelised' secara semulajadi.

Aku hanya akan pakai sedikit sahaja bawang merah, halia dan sebatang serai. Dulu, mak aku suka letak kiub ikan bilis, atau pati ayam.

Kawalan haba juga penting untuk sambal tumis. Timing juga memberikan kesan mendalam.

DAN.

Jangan sesekali menggunakan minyak kelapa untuk membuat sambal tumis. Tak best langsung.

Sambal tumis yang aku cakap ni, sambal tumis kosong. Kalau nak buat sambal tumis kerang, udang, kepah ataua apa-apa yang lain, lain hari aku cerita.

Kat KL, aku tak pernah jumpa orang atau kedai yang buat sambal belacan macam aku buat kat kampung, yang boleh mencecah kepedasan maksimum sampai sakit perut, guling-guling atas tanah. Inilah hikmat satu juta Scoville. Lagi pedas dan panas dari semburan lada.

Dalam impian untuk mencapai kepanasan neraka, aku namakan sambal belacan resepi keluarga aku turun-temurun, sebagai Sambal Syaitan.

Nasi Lemak Buah Bidara

Aku dah tiga bulan dah, tak tidur malam.

Bukan tak tidur. Jarang tidur malam. kalau tidur pun, aku bangun pukul empat pagi atau pukul lima.

Oleh sebab aku jaga pada awal pagi, aku sekarang asyik makan sarapan pagi kat kawasan rumah aku.

Sejak tiga minggu lepas, aku naik teksi pagi-pagi buta pergi makan nasi lemak kat satu gerai Sri Petaling.

Gerai tu ada dua peniaga - dua-dua perempuan Melayu. Aku kalau perempuan Melayu berniaga makanan ni, biasanya aku beli. Pasal kesian satu hal, tapi pasal nak cari masakan Melayu sekarang makin susah. Asyik mamak je, berak cair aku.

Dua orang kakak tu ambik sebelah menyebelah. Yang satu, memang berniaga nasi lemak berlauk sahaja. Panggil dia Kak Nasi Lemak la. Yang satu lagi, jual air, lontong, nasi kerabu, pulut kuning, roti canai, bihun/me sup/kari. Tengahari dia jual nasi campur. Aku panggil dia Kak Lontong la.

Kak Nasi Lemak dan Kak Lontong ni pakai pekerja dari Indonesia. Ramai yang dia ambik, cuma aku rasa macam cacamerba sikit. Takde sistem.

Masa aku nak beli nasi lemak, ada sampai empat orang bekerja, tapi takde sorang pun yang layan aku.

Pasal apa? pasal semua empat orang tengah buat benda yang sama. Semua tengah bungkus nasi lemak, jadi takde sapa yang letak nasi dalam kertas minyak.

Bila dah habis bungkus, semua empat orang pergi isi nasi lemak dalam bungkus, tapi sudip ada satu je. Berkerumunlah empat orang keliling tempat isi nasi.

Aku jenis tak tidur, jadi kadang-kadang, aku datang awal. Sejak kebelakangan ni, Kak Nasi Lemak tu asyik bukak lambaaat je.

Aku tak kecoh pun. Aku duduk je. Isap rokok.

Pastu, pekerja dia tiba-tiba cakap kat aku.

Pekerja: Kak ___, dia nak kahwin.

Aku: Hah, hah.

Okay. Kalau ada bapak aku kat situ, memang dah kena dah.

Pekerja: Kak ___, dia nak kahwin.

Bapak Aku: Pedulittaik aku?

Aku layan jelah orang Indonesia tu. Jauh dia datang pasal nak bagitau orang kahwin.

Aku: Wah! Kahwin! Muda lagi ke akak tu, kak?

Pekerja: Ni dia kahwin nombor kedua.

Okay. Maksudnya, ni kali kedua la minah tu kahwin. Bukan laki nombor dua.

Aku pun tunggulah. Tunggu punya tunggu, sampai pukul 8.45 pagi baru datang bawak nasi lemak dia. Aku dah selamat dah, makan lontong.

Beberapa kali dia datang lambat. Mungkin dia tak perlukan pelanggan yang masuk kerja pukul 8 pagi atau dia sibuk buat baju pasal nak kahwin, takpun, dia saja nak jahanamkan bisnes dia pasal laki dia orang kaya. Apa-apa hal pun, lantak dia lah. Bisnes dia.

Okay, jadi aku pun datang makin lambat. Pasal nak makan nasi lemak.

Satu perkara aku perasan, harga dia tak pernahnya sama.

Aku makan nasi lemak, ambik lauk kerang dengan telur, sambal udang petai - aku tak ambik udang, aku ambik sambalnya aje. Ko tau berapa dia caj? RM5.80. Lantak kau lah kan? Bisnes ko. Kalau aku tak suka, aku makan benda lain.

Sedap la pulak kerang dia. Berbaloi la dengan harga. Aku nak bungkus satu untuk makan tengahari. AKu ambik sebijik, sama macam apa aku makan tadi. Ko tau dia caj aku berapa? RM4.80.

Aik?

Apa pasal? Aku malas nak kecoh, aku blah je. Takkan pasal seringgit, aku nak gantung akak tu, lekatkan bateri kereta kat ibu jari kaki, pastu tanya pasal Amitabh Bachan?

Aku: Mere mangke Gangga, altere mangki jamenata. Bol, radha bol de Pearl Harbour, hoga ke nehi.

KAk Nasi Lemak: Nehi!!! Inspektor sahab da chai walla!

Hari ni, aku pergi la, lambat macam biasa.

Aku: Kak, ni kira macam mana sebenarnya nasi lemak ni?

Kak: Ambik je dulu. Nanti kira.

Aku: Yelah, tapi kalau kelempong (peparu) ni berapa? Saja tanya. Pasal kadang-kadang, harga lain-lain.

Kak: Ambik je dulu.

Huuuuh. Okay. AKu pun ambik la.

Aku: Berapa ni?

Kak: RM4.50. Kira, kalau banyak, tinggi la harganya. Kalau sikit, sikit la.

Aku sebenarnya tak selesa sangat, kalau nak kira main rasa-rasa ni. Bukan pasal kedekut nak bayar lebih seringgit atau lima puluh sen. Tapi, aku cuma nak tau macam mana dia kira. Supaya aku boleh buat keputusan dengan lebih senang. Masa aku tengah kaya, boleh le hentam udang masak petai ke, robot masak merah ke. Masa cek tak clear lagi, aku boleh berjimat dengan makan telur goreng je.

Ada duit atau takde, duit, aku nak tau berapa yang aku ambik. Aku taknak main rasa-rasa je. Tapi lantak lah. Bukan bisnes aku.

Aku dah kasi banyak peluang dah kat Kak Nasi Lemak ni. Aku rasa, aku akan terus beli nasi lemak dia. Bukan pasal sedap sangat - aku pun boleh masak lagi best - tapi pasal aku kesian. Dan aku harap laki baru dia bukan jenis yang paksa perempuan kerja, pastu ketagih dadah. Pastu belasah bini.

Tapi, untuk makan tengahari, aku beli pulut kuning la dari Kak Lontong.

Aku: Wah, banyak nya kak letak?

Kak Lontong: Sedekah hari Jumaat.

Aku sengih je. AKu ni, boleh ke terima sedekah? ATau tzedekah, kata orang Yahudi. Aku bukan fakir miskin. Hadiah, boleh la aku terima. Sedekah, haram aku rasa.

Ala, macam la aku masuk syurga. Aku bukan orang PIS-M.

Masa balik, ada la pulak pemintak sedekah lalu depan aku. Aku tengok, dari jauh, elok je dia jalan. Sampai kat depan aku, tiba-tiba terketar-ketar la pulak.

Apa, aku ni Hanuman Kera Putih ke? Atau ikut sebut orang lama, Anduman? Siluman Mawas Merah? Panji Semerang? Jaka Sembung? Joko Suprianto?

Aku terfikir jugak nak kasi pulut tu kat orang mintak sedekah, tapi aku malas jugak la nak layan conmen macam ni.

Apa-apa hal pun, aku naik teksi, borak dengan pakcik teksi pasal politik, pastu sampai rumah cukup awal untuk terima pencuci rumah. Hari ni, rumah aku dicuci. Akan jadi bersih.

Perempuan ni pun ada banyak cerita dia. Orang Indonesia. Yang tu nanti la aku tulis. Aku nak bukak TV, tengok Najib masuk jadi PM.

I am the Capo di Tutti Frutti.

Pseudo-Intellectualism: Dick

Taking a break from work, I couldn't help but make an observation that people put so much expectations on political figures and politics.

High expectations, even bigger letdown.

I am of the belief that Governments and leaders exist in support of normal people.

My grandfather often drove home this point.

He would ask me, when I was very young, "Who are the Government? What is the Government?"

And I'd say, "The Prime Minister? Dr M? UMNO?"

He'd roundhouse kick me and say, "No. We are the Government. We govern ourselves. So we are the Government."

So when some people asked me to 'fight the Government', I declined, because I have no interest in fighting myself.

Those people we see in Parliament, in the Houses, the Cabinet and whatever are merely the administrators of the Government. And as you can see in Internet forums and message boards, Admins merely lay down the rules. It is up to the members to create the content and ensure that the community stays alive and exciting.

The over-emphasis on the elected representatives is a waste, in my opinion. Any society and community ultimately depends on the actions of each individual that builds up into something, like a crescendo. I see things as a bottoms-up approach rather than a top-down shit.

It is not an accurate representation, but I have seen the problems with a top-down model in my village.

Over the years, the state Government has poured in money to start numerous projects. They provided what they THOUGHT would work, based on what they ASSUMED the people would do.

Some of these projects did not succeed the way they envisioned it because of low participation from the people.

Instead, I believe if there was a movement from individuals, growing into groups of individuals, supported by the financial and legislative muscle of the Government, some projects could have been executed better.

Therefore, the key to saving the world lies not with the politicians, but with each and every one of us. Everyone gets to vote, every day, with their actions, their words and most importantly, their work.

Turn in poor work, run away from your responsibilities, and you vote for a poor world, an irresponsible world. Do it right, as well as you can, and you are contributing towards a more perfect creation.

I have never been to Japan, but I have watched a lot of documentaries about that nation. In one Japan in Focus documentary about making lunch, one guy said that if he didn't do his lunch properly, with pride and passion, some guy's lunch or breakfast would be ruined and he, in turn, will ruin some other dude's day. And the next, and so on and so forth.

In Buddhism, it is said that everything is connected.

Fair-Weathered

I just woke up.

Man, I need to take a day off when I would sleep, and only sleep. That day would not be today. Am going to write 10 scenes now. And 10 scenes from another project.

Am not complaining, though.

While other people are losing their jobs, I am given more work than I could chuck a shoe at.

Some people made comments that I have no friends. I was like, "Whuh?" They judged me simply because when I go to clubs, I tend to stay out of everyone's way.

I would sit alone. And read. And eat. And drink.

I don't dance. I don't sing. I don't pretend to be everyone's best friend. I don't pretend I'm glad to see anyone, if I'm not.

I'm no fun. Because it doesn't feel right to dance and sing at any place other than where the women are mostly good-looking and close to naked. And sometimes sucking my dick.

And friends.

Most of my friends either:

1. Don't go to clubs. For various reasons. Work. Status. Money. Time. Taste. Religion. Politics.

Prostitution



This is not a Thai prostitute. This is Jeerawan - a Thai girl with views against prostitution.

I find a growing number of younger Thais sharing her stand. I wish to neither support nor condemn these opinions. It is a Thai matter and best left to the Thais to sort out.

What I do believe in is perhaps the regulation of prostitution worldwide. Wrong Asshole

In my short life, many people told me I was wrong.

I was wrong about this, I was wrong about that. I can't do this, I can't do that.

And one by one, I proved them wrong.

It became a quest of sorts. A reason to not sleep. To go the extra mile. Just to show them that there are more ways to see something than just a fixed perspective from narrow blinders.

And then, I discovered that it was all pointless. People will be people. They will never see it my way, simply because they are not me. They have never seen exactly what I have seen. And I refuse to see it from their vantage point, because I do not want to be anyone else. All our experiences are unique.

It would be unfair for anyone to expect anyone else to share the same truths, because everyone has their own truth. Like everyone has an asshole. And everyone IS an asshole.

I could have allowed myself to be consumed about being right. And I would have been. For the only thing you need to prove yourself right is persistence and effort.

However, there are so many other things worth pursuing. I have seen people whose entire lives were about proving others wrong. About being right. And while in some cases these are very comfortable lives, I do not wish to live their life.

In other cases, their lives were riddled with pain and emptiness. And yet they claim to be fulfilled, simply because they believe being in pain is being right. The currency of pain.

The things I eventually find important - the collection of stuff - is unique. As is with everyone else.

We are all similar in that we are uniquely different.

These days, the only thing I really care about is my work. That one, I need to get it right. As right as I could manage. No more, no less.
